Snowball Cookies
These cookies are also called Russian teacakes. The recipe can easily be made vegan by substituting the butter for a vegan alternative.
Ingredients
16 tablespoons unsalted butter, softened
70 grams superfine granulated sugar
1-¹/₂ teaspoons vanilla extract
285 grams all-purpose flour
¹/₂ teaspoon salt
225 grams nuts (1 cup meal, rest finely chopped)
1 cup (?) powdered sugar, for coating
Directions
Mix butter, sugar, and vanilla thoroughly.
Stir flour and salt together. Blend into butter mixture. Mix in nuts.
Chill the dough.
Heat oven to 400°F (205°C). Roll dough into balls approximately 10 grams each.
Place dough balls on ungreased baking sheet. The cookies do not spread. Bake 10 to 12 minutes, or until set but not brown.
While still warm, roll in powdered sugar. Let cool. Roll in sugar again.
