Snowball Cookies

These cookies are also called Russian teacakes. The recipe can easily be made vegan by substituting the butter for a vegan alternative.

Ingredients

  • 16 tablespoons unsalted butter, softened

  • 70 grams superfine granulated sugar

  • 1-¹/₂ teaspoons vanilla extract

  • 285 grams all-purpose flour

  • ¹/₂ teaspoon salt

  • 225 grams nuts (1 cup meal, rest finely chopped)

  • 1 cup (?) powdered sugar, for coating

Directions

  • Mix butter, sugar, and vanilla thoroughly.

  • Stir flour and salt together. Blend into butter mixture. Mix in nuts.

  • Chill the dough.

  • Heat oven to 400°F (205°C). Roll dough into balls approximately 10 grams each.

  • Place dough balls on ungreased baking sheet. The cookies do not spread. Bake 10 to 12 minutes, or until set but not brown.

  • While still warm, roll in powdered sugar. Let cool. Roll in sugar again.
