Stan Wheeler's BBQ Sauce
This recipe was adapted from Oregon sport broadcaster Stan Wheeler’s recipe for BBQ sauce. Feel free to up the heat with more tabasco to taste!
Ingredients
1 tablespoon olive oil
1 medium yellow onion, finely chopped
1 large clove garlic, finely minced
6 oz tomato paste
1 cup ketchup
1/4 cup Worcestershire sauce
1/2 teaspoon ground allspice
1/2 teaspoon freshly ground black pepper
1/2-1 1/2 teaspoon tabasco sauce
1/3 cups apple cider vinegar
3 tablespoons dark brown sugar
1 orange, cut into supremes, reserve juices
1 Turkish bay leaf (or 1/2 California bay leaf)
Directions
Heat a medium saucepan over medium-high heat. Add the oil, followed by the onion. Saute until translucent, about 3 minutes. Add the garlic and cook until fragrant, about 30 seconds.
Add the tomato paste, ketchup, Worcestershire sauce, allspice, black pepper, tabasco, vinegar, brown sugar, orange supremes and juices, and the bay leaf; stir to combine. Bring to a boil; reduce heat and cook at a simmer, stirring occasionally, until thickened slighlty and flavors have married well, about 20 minutes.
Remove from heat.
Sauce can be stored in the refrigerator in a sealed container for up to a week, or frozen for up to 3 months.
