Stan Wheeler's BBQ Sauce

This recipe was adapted from Oregon sport broadcaster Stan Wheeler’s recipe for BBQ sauce. Feel free to up the heat with more tabasco to taste!

Ingredients

  • 1 tablespoon olive oil

  • 1 medium yellow onion, finely chopped

  • 1 large clove garlic, finely minced

  • 6 oz tomato paste

  • 1 cup ketchup

  • 1/4 cup Worcestershire sauce

  • 1/2 teaspoon ground allspice

  • 1/2 teaspoon freshly ground black pepper

  • 1/2-1 1/2 teaspoon tabasco sauce

  • 1/3 cups apple cider vinegar

  • 3 tablespoons dark brown sugar

  • 1 orange, cut into supremes, reserve juices

  • 1 Turkish bay leaf (or 1/2 California bay leaf)

Directions

  • Heat a medium saucepan over medium-high heat. Add the oil, followed by the onion. Saute until translucent, about 3 minutes. Add the garlic and cook until fragrant, about 30 seconds.

  • Add the tomato paste, ketchup, Worcestershire sauce, allspice, black pepper, tabasco, vinegar, brown sugar, orange supremes and juices, and the bay leaf; stir to combine. Bring to a boil; reduce heat and cook at a simmer, stirring occasionally, until thickened slighlty and flavors have married well, about 20 minutes.

  • Remove from heat.

  • Sauce can be stored in the refrigerator in a sealed container for up to a week, or frozen for up to 3 months.
